Production process
Matcha is stone-ground green tea powder made from shade-grown tea.
The tea leaves are covered with straw mats four weeks before harvest, which ensures that the plant produces more chlorophyll and amino acids. The more amino acids the leaves contain, the brighter the green color and the healthier the tea.
The leaves are hand-picked, then steamed and dried. After this, the stems and veins are removed. The result, which is called tencha, is finally stone-ground into matcha powder.

The better the quality of the matcha, the higher the content of antioxidants, amino acids, and other nutrients. When consuming matcha, you drink the green part of the leaf, which is exactly where all those nutrients are found. This is in contrast to regular green tea, where you remove the tea leaves before drinking.
Moreover, Matcha contains a quarter less caffeine than a cup of coffee, but due to the slow release of caffeine, it provides an energy boost for up to 6 hours.

Preparation of matcha

Fill a matcha bowl halfway with hot water and place your matcha whisk in it. This makes it supple, allowing you to get a nicer foam layer when frothing. The bowl warms up, preventing the prepared matcha from cooling down quickly. After 1 minute, empty the bowl and dry it carefully.

Use a bamboo spoon to put the right amount of matcha into the bowl and make a paste with a little water and the whisk.

Fill the bowl with 60-90 ml of water at 80°C.

Use the bamboo whisk to make W-motions without touching the sides and bottom. Make these movements from your wrist. Stop when there is a nice layer of foam on the matcha. The fewer bubbles there are in the foam, the more successful it is.
