Difference between matcha and green tea

The difference between matcha and regular green tea lies in the cultivation and processing of the tea leaves. Before being processed into matcha, the tea bushes are placed in the shade so that the leaves produce more chlorophyll. This substance gives matcha its beautiful, bright green color. Next, the tea leaves are steamed, dried, and, unlike regular green tea, stone-ground into a fine powder. After this, the powder is whisked with 80°C hot water until the substance begins to foam.
